Hmmm...Caramel Popcorn is the BEST! (Especially for watching football!!!!)

Alrighty, I think it's about time somebody else posts something on the fantastic blog. Isn't Ambiferous the best?! Alright here's the easiest recipe for caramel popcorn that is to die for...
Here's whatcha need:
1C unpopped corn
1Cube butter
1C brown sugar
1/4C Caro syrup
1 pinch salt

Then:
1. Put everything in a glass bowl and throw it in the microwave for 2 min.
2. Start popping the corn
3. Take the mixture out (careful, it's HOT) and stir really well to dissolve sugar.
4. Put it back in the microwave for 2 more minutes
5. Pour over the popped corn & stir.
6. Get messy!...or don't but enjoy!

Pumpkin Pie Squares-Amber Meredith

I LOVE Autumn and fall foods! I can never wait for autumn to come fast enough so we can enjoy all the yummy foods...like Pumpkin!!!

PUMPKIN PIE SQUARES

1 C Flour
1/2 C quick cooking oats
1/2 C packed brown sugar
1/2 C Butter

FILLING:

2 cans (15 oz. each) pumpkin
2 cans (12 oz. each) evaporated milk
4 Eggs
1 1/2 C Sugar
2 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground cloves

TOPPINGS:

1/2 C packed brown sugar
1/2 C chopped pecans
2 TBSP butter or margarine, softened

Combine the first four ingredients in bowl and mix until crumbly. Press into a greased 9x13 in. pan. Bake @ 350 for 20 minutes, or until golden brown.

Meanwhile, beat Filling ingredients in bowl until smooth. Pour over crust. Bake for 45 minutes.

Combine topping ingredients and sprinkle over filling. Bake an additional 15-20 minutes. Cool, then cut into squares. Cover and refrigerate leftovers.

Jenny...we all know you have many, including some great "yummy chocolate dessert" treats, and Jenilyn...what about that awesome alfredo sauce and corn bread recipe? And then there is grandma....who is the cook of all cooks...we need yours too! Lets come up with some fresh and new ideas....and then maybe in the next few months we can get together and share our new recipes?? Let's make the theme Autumn...since fall is approaching...and we can share our favorite fall recipes! Then let's all plan a weekend in September to get together! How does it sound? And after we are done taste-testing everything, we can bag and box it all up and we will send it your way, Jeigh!!! he he....What? You don't think that's a good idea?!! Hey...if Rex can eat week old smokies....he'd love our treat! Anyway...let's get to posting!
